Introduction :

Pullulan is natural water-soluble polysaccharide, fermented by Auveobasidium Pullulans. It consists mainly of maltotriose units linked through α-1, 6 - glucosidic bonds. The average molecular weight is 2×105 Da. Pullulan can be developed into various products. It is an excellent film-former, producing a film which is heat sealable with good oxygen barrier properties. It can be used widely in both the pharmaceutical and food industries, such as encapsulating agents, adhesives, thickening, and extending agent.

In 1976  Pullulan was approved as a food ingredient in Japan.

In  2002  Pullulan was approved by FDA and recorded in GRASGRAS Notice No.GRN99).

Product Applications :

Coating

The high binding and film-forming properties of Pullulan make it a valuable ingredient for coating. Not only can Pullulan help produce strong, smooth and highly glossed surfaces but also increase shelf life.

 

Dressing and Sauces

Due to its 'adhesive property' use of pullulan in sauces improves their 'on product' retention without unduly increasing sauce viscosity. It is acknowledged that it is difficult to retain sauces on the surface of some pre-cooked meat and fish products; but this problem can be overcome by incorporating pullulan into the formulation.

 

Innovative Soft Candy

Incorporation of  2-3% Pullulan enables innovative soft chewy candies to be made by a cold extrusion process without resorting to conventional boiling. This enables heat sensitive materials to be used in these products.

 

Edible chewing gum

Pullulan is very safe and edible, and has a widely use in coating area, such as additives for chewing gums, candies coatings, and so on.

  

Egg and fruit preservation

Eggs are usually coated with paraffin for preservation at room temperature, but the result is not satisfactory. Pullulan can be applied as a coating material on the surface of the eggs to extend the shelf life, enhance eggshell hardness, and reduce collision damage. Pullulan is edible, and is easy to be washed away in water. It is also applicable on oranges, apples, and other fruits. 

 

Details

Pullulan is a biopolymer with unique and interesting properties. It is basically a
polysaccharide produced by the fermentation of carbohydrate (starch/sugar) by
Aureobasidium pullulans. Ubiquitous yeast like fungus. Chemically, it consists of
repeated unit of maltotriose units where three glucose units in maltotriose are
connected by an α-1,4 glycosidic bond and consecutive maltotriose units are
connected to each other by an α-1,6 glycosidic bond. This typical linkage
pattern in fact render some distinctive physical traits which are different from
many known polysaccharide, one interesting characteristic it posses is
high adhesion properties, which tend to form strong film with oxygen impermeable ability.

 

Pullulan is a white to off white powder and is flavorless, odorless tasteless and
extremely stable. It is non toxic and non immunogenic in nature and readily dissolves
in water and at 5-10% it forms a non-hygroscopic viscous solution. Its viscosity is
comparatively lower than many polysaccharides and it equivalent to gum Arabic. Its
viscosity high in lower concentration and remains constant to relatively high
concentration and does not form a gel. It decomposes at 250 C -- 280 C.
Being a versatile polysaccharide it has wide and interesting application in food,
cosmetic and pharmaceutical industry with a technology platform for innovation.
